
Here’s a delicious vegan Madeleine recipe! They are a Moroccan-inspired variation of madeleines, often infused with citrus and warm spices. This version is completely plant-based, soft, and aromatic.
Vegan Madeleines
(Serves: 12 madeleines)
Ingredients:
- 1 cup (120g) all-purpose flour
- ½ cup (100g) coconut sugar or cane sugar
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp ground cardamom (optional)
- Zest of 1 orange
- ¼ cup (60ml) orange juice
- ⅓ cup (80ml) plant-based milk (almond or soy)
- ⅓ cup (80ml) melted coconut oil or neutral oil
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
Instructions:
- Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a madeleine mold with a little coconut oil.
- Mix Dry Ingredients: In a bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, cardamom, and orange zest.
- Mix Wet Ingredients: In a separate bowl, whisk together the orange juice, plant milk, melted coconut oil, apple cider vinegar, and vanilla extract.
- Combine: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Fill Molds: Spoon the batter into the madeleine molds, filling each about ¾ full.
- Bake: Bake for 12–15 minutes or until golden and a toothpick inserted comes out clean.
- Cool & Enjoy: Let them cool in the mold for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature with tea!
