
I have been very fortunate to experience Diwali in both India and Singapore. It is a festival of lights, making of rangolis and sharing of fabulous sweets. I have always loved Indian sweets and desserts. I love making barfi, kulfi and laddu.
Today I am sharing my healthy plantbased laddu recipe that is very in high omega 3. Put on your favorite kurtu and let’s get this celebration underway!
Diwali plant-based laddu
Step 1
1/2 cup Almond flour
1/2 cup Gram four
2 Tablespoons Coconut oil
In a pan heat the coconut oil and add both flours. Mix it well and let the flours combine well with the oil. I let it roast on the stove for at least 4 minutes. Set aside.
Step 2
2 Tablespoons Pumpkin seeds
2 Tablespoons Sunflower seeds
2 Tablespoons Sesame seeds
1 Tablespoon Chia seeds
1 Tablespoon Flaxseed
1/4 Shredded Coconut
100g Dried fruit and nut mix( cranberries, almonds…)
Blend everything together
Step 3
6 Madjool dates (pitted)
Blend in a blender to create paste.
Step 4
Mix the dates and the seeds together in a bowl, add the flour mix and add the spices.
Spices:
2 Teaspoons Cinnamon
1 Teaspoon Ground ginger
1 Teaspoon Cardamon powder
1/4 Teaspoon Ground Nutmeg
Mix all the ingredients together, roll small balls and put them into the fridge to set. The are ready to eat, but if you want to make them extra special melt some 100% cocoa dark chocolate and cover all the decadent balls. For an special touch I added a pumpkin seed… Now they are ready to enjoy and be shared with loved ones and neighbors.
